What's Cookin' Good Lookin' (Take 2)

It's Tuesday again and I'm taking another stab at What's Cookin' Good Lookin'. Want to get some great, new, and delicious recipes to make during the week? Want to help me and hubs save money by not going out to dinner too dang much (please)? Well, look no further. Here's how to share your recipe:

Here's what cooking at our house tonight:

Easy Cottage Cheese, Crab Quiche


This is one of my favorite recipes to make during the week because it's delicious, healthy, light, and as easy as pie quiche to make. You can really vary what you put in the quiche (let me know if you have a good combo!) I love me some options!

Here's what you need to make it my way:
20 oz cottage cheese
3/4 cupish roasted red peppers chopped
3/4 cupish broccoli chopped
1/3 cupish grated cheese (I use cheddar)
1/3 cupish bread crumbs
4 eggs (2 whole, 2 whites)
1/2 cupish Louis Kemp imitation crab, chopped


To make quiche:
1. Preset oven to 350 degrees
2. Mix all ingredients
3. Pour into 9inch pie pan
4. Bake for 45 minutes
5. Enjoy and serve with your choice of side (I like fruit or steamed veggies)

**tip- to catch any overflow, I always put the pie pan on a cookie sheet while it bakes**
